Warming Winter Vegetable Soup

A delicious vegetable soup recipe in 4 easy steps.


Serves 8


Ingredients 
1 medium-size head of Savoy cabbage, quartered and cored
2 tbsp vegetable oil
4 carrots, thinly sliced
2 celery sticks, thinly sliced
2 parsnips, diced
21/2 pt (1.5 litres) chicken stock
3 medium-size potatoes, diced
2 courgettes, sliced
1 small cauliflower, stems trimmed and separated into florets
2 tomatoes, seeded and diced
1/2 tsp fresh thyme leaves, or 1/4 tsp dried thyme
2 tbsp chopped fresh parsley
salt and pepper to taste



STEPS:



STEP 1 : Slice the cabbage quarters into thin strips across the leaves.


STEP 2 : Heat the oil in a large saucepan. Add the cabbage, carrots, celery and parsnips and cook 10~15 minutes over medium heat, stirring frequently


STEP 3 : Stir the stock into the vegetables and bring to the boil. Skim off any foam that rises to the top.


STEP 4 : Add the potatoes, courgettes, pepper, cauliflower and tomatoes with the herbs, and salt and pepper to taste. Bring back to the boil. Reduce the heat to low, cover the pan, and simer until the vegetables are tender, 15~20 minutes.
