Club Sandwiches

SERVES 4



INGREDIENTS

8 rashers of bacon
12 slices of white bread, toasted
4floz (125ml) mayonnaise
4-8oz (115-225g) cooked chicken breast meat, sliced
8 large lettuce leaves
1 beef tomato, cut across in 4 slices
salt and pepper



Hearty Lentil Soup

SERVES 6


INGREDIENTS


6 oz (175g) brown lentils
13\4 pt (1 litre) chicken stock
8 floz (250ml) water
2 floz (65ml) dry red wine
11\2 lb (700g) ripe tomatoes, peeled, seeded and chopped, or 14 oz (400g) canned chopped  tomatoes
1 carrot, sliced
1 onion, chopped
1 celery stick, sliced
1 garlic clove, crushed
1\4 tsp ground coriander
2 tsp chopped fresh basil, or 1\2tsp dried basil
1 bay leaf
6 tbsp freshly grated Parmesan cheese



Fried Cheddar and Chutney Sandwiches

11\2oz (45g) butter or margarine
3 large garlic cloves, crushed
3 floz (85ml) homemade or bottled mango chutney
8 slices of white bread

Roast Pork and Coleslaw Rolls

SERVES 6


INGREDIENTS
6 floz (175ml)mayonnaise
2tbsp tomato ketchup
1\4-1\2 tsp cayenne pepper
1tbsp light brown sugar
1 lb (450g) roast pork, thinly sliced
1 lb (450g) green or white cabbage, cut into wedges
2 carrots, finely grated
1 small green pepper, seeded and diced
1\2 small red onion, finely chopped
12small round white bread rolls, split open

Roast Beef and Horseradish Open Sandwiches

SERVES 4


INGREDIENT
4 slices of pumpernickel or rye bread
12oz (350g)  roast beef, thinly sliced
salt and pepper
4tbsp mayonnaise
11\2 tbsp prepared horseradish
2 small tomatoes, seeded and chopped
2-2 tbsp finely chopped pickled gherkin
fresh dill sprigs, for garnishing

Tuna and Tomato rolls

SERVES 4


INGREDIENTS
2 x 7oz (200g) cans tuna fish, drained
2tbsp finely chopped black olives
2 fl oz (65 ml) finely chopped drained sun-dried tomatoes preserved in oil
3 spring onions, finely chopped
4 round white break rolls, split open
1 handful rocket or small lettuce leaves


For the dressing:
1.5 tbsp red wine vinegar
5 tbsp olive oil
3 tbsp chopped fresh basil
salt and pepper, to taste

Chilli Hot Dogs

SERVES 6


INGREDIENTS
6 frankfurters
6 large finger rolls, split open
1oz (30g) butter or margarine
11\2oz (45g) Cheddar cheese, grated
11\2oz (45g)red onion, chopped
FOR THE CHILLI
2tbsp corn oil
1small onion, chopped
1\2 green pepper, seeded an chopped
8oz (225g) minced beef
8floz (250ml) fresh tomatoes, blanched, skinned, cooked and sieved
3oz(85g) drained canned red kidney beans
2tsp chilli powder, or to taste
salt and pepper



Mozzarella Cheese and Tomato Sandwiches

SERVES 4


INGREDIENTS
4 small round white bread rolls
4floz (125ml) freshly made or bottled pesto sauce
8oz (225g) Mozzarella cheese, thinly sliced
4 medium tomatoes, thinly sliced
3 tbsp olive oil
fresh basil leaves, for garnishing



Warming Autumn Soup

SERVES 4


INGREDIENTS
1oz (30g) butter or margarine
2 small onions, finely chopped
1 lb (450g) butternut squash or pumpkin, peeled, seeded and cubed
2pt (1.25litres) chicken stock
8oz (225g) potatoes, cubed
1tsp paprika
4floz (125ml) whipping cream (optional)
11\2 tbsp chopped fresh chives, plus whole chives, for garnishing
salt and pepper



Spicy Mixed Bean Soup

SERVES 8

INGREDIENTS
12oz (350g) dried black or red kidney beans, soaked overnight
31\2pt (2litres) water
6 garlic cloves, crushed
12oz (350g) dried haricot or white beans, soaked overnight
6tbsp balsamic or white wine vinegar
4 chilli peppers, seeded and chopped
6 spring onions, finely chopped
juice of 1 lime or lemon
2 floz (65ml) olive oil
3tbsp chopped fresh coriander, plus more for garnishing
salt and pepper

Greek Salad in Pitta Bread

SERVES 6


INGREDIENTS
1\2 small head of iceberg lettuce, cut in fine strips across the leaves
1\2 cucumber, diced
9 cherry tomatoes, halved
2 spring onions, finely chopped
4oz (115g) feta cheese, crumbled
8 black olives, stoned and chopped
6 oval pitta breads, cut in half crosswise
FOR THE DRESSING
1 small garlic clove, crushed
1\8tsp salt
1tsp fresh lemon juice
2tbsp olive oil
1tsp chopped fresh mint
pepper
