Mozzarella Cheese and Tomato Sandwiches


4 small round white bread rolls
4floz (125ml) freshly made or bottled pesto sauce
8oz (225g) Mozzarella cheese, thinly sliced
4 medium tomatoes, thinly sliced
3 tbsp olive oil
fresh basil leaves, for garnishing


STEP 1 : With a serrated knife, cut each roll open in half. Spread 1 tablespoon of pesto sauce over the cut side of each half.

STEP 2 : Arrange alternating slices of Mozzarella cheese and tomato on the bottom half of each roll.

STEP 3 : Drizzle the olive oil over the cheese and tomatoes.

STEP 4 : Replace the top half of each roll; garnish with basil leaves, if you wish.
