Fried Cheddar and Chutney Sandwiches

SERVES 4


INGREDIENTS
11\2oz (45g) butter or margarine
3 large garlic cloves, crushed
3 floz (85ml) homemade or bottled mango chutney
8 slices of white bread





STEPS


STEP 1 : Melt the butter or margarine in a small saucepan. Add the garlic and cook until softened but not brown, about 2 minutes, stirring. Remove from the heat.


STEP 2 : Spread the chutney on 4 slices of bread.


STEP 3 : Divide the cheese among the 4 bread slices, spreading it evenly. Top with the remaining bread slices.


STEP 4 : Brush both sides of each sandwich with the garlic butter.


STEP 5 : Fry the sandwiches in a hot frying pan over a medium heat until golden brown, about 2 minutes on each side. Serve immediately.
