Tuna and Tomato rolls


2 x 7oz (200g) cans tuna fish, drained
2tbsp finely chopped black olives
2 fl oz (65 ml) finely chopped drained sun-dried tomatoes preserved in oil
3 spring onions, finely chopped
4 round white break rolls, split open
1 handful rocket or small lettuce leaves

For the dressing:
1.5 tbsp red wine vinegar
5 tbsp olive oil
3 tbsp chopped fresh basil
salt and pepper, to taste


STEP 1 : For the dressing, combine the vinegar and oil in a  mixing bowl. Whisk until an emulsion is formed. Stir in the basil. Season with salt and pepper.

STEP 2 : Add the tuna, olives, sun-dried tomatoes and spring onions and stir.

STEP 3 : Divide the tuna mixture among the rolls. Top with the rocket or lettuce leaves and replace the tops of the rolls, pressing them on firmly.
